- 3½ cups all-purpose flour
- 1 teaspoon salt
- 2 teaspoons baking powder
- 4½ teaspoons cream of tartar
- ¼ cup cold unsalted butter, diced
- 2 tablespoons shortening
- 1 cups buttermilk
- 1 large egg, beaten
Preheat oven to 425 F. Sift the flour, salt, baking soda and cream of tartar into a large bowl. Work in butter and shortening until mixture is the texture of wet sand. Add the buttermilk all at once and mix briefly.
Roll out dough to 1-inch thickness. Cut out scones with floured 2½-inch cutter. Place on lightly greased cookie sheet, brush tops with egg wash and bake for 10 minutes or until golden. Makes 12.
