Tea Time

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 4 teaspoons cream of tartar
  • cup cold unsalted butter, diced
  • 2 tablespoons shortening
  • 1 cups buttermilk
  • 1 large egg, beaten


Preheat oven to 425 F. Sift the flour, salt, baking soda and cream of tartar into a large bowl. Work in butter and shortening until mixture is the texture of wet sand. Add the buttermilk all at once and mix briefly.

Roll out dough to 1-inch thickness. Cut out scones with floured 2-inch cutter. Place on lightly greased cookie sheet, brush tops with egg wash and bake for 10 minutes or until golden. Makes 12.
